Lime & Coconut

Key Lime Cake with Coconut frosting. Mmmmmm!
I took a simple vanilla cake recipe (if you use a cake mix, I suggest white cake) and added grated lime zest and some lime juice.
Then made cream cheese frosting and added creamed coconut... found at the grocery store in a small box by the shredded coconut.

ps. Did you know you can make your own cake flour by taking  2T per cup of flour and replacing it with cornstarch? You do have to sift it 4 or 5 times, but it is fabulous when you don't have cake flour on hand.

I had a get together for my friend Val on her birthday at my place. We had Lemon cupcakes with a creamy light lemon mousse topped with half of a strawberry. Happy Birthday Val!!!

All American Apple Pie

Apple Pie, my favorite! The pie crust recipe was from 'The Gathering Place' #2 cookbook, very flakey & easy to make. The pie filling came from 'The Best of Virginia' cookbook (one that I use often). The filling is so good almost a little caramel apple like ... but not. Absolutely delicious!

Saw a cute little girl wearing one of these the other day, thought I would try to make one and it was way easy.
step 1: Cut out graduating circles of satin.... as big or small as you want.
step 2: With a lighter, lightly melt edges of circles. They curl automatically.
step 3: Glue circles with fabric/craft glue to make the flower
step 4: Glue rhinestone/button etc. in center of flower
step 5: Glue feather and then cotton circle on back
step 5: Hot glue aligator clip on back

Chocolate Ruffles

My sis-in-law liked the pink ruffle cake so much she decided she wanted to make one for her boss' birthday. So I helped her decorate it. It looked scrumptious!
