I was asked to teach another class on Valentine's desserts, and again it was so much fun! While I was walking into the building, the tray of cupcakes slipped out of my hand. Some fell on the plastic wrap, some fell on the ground. We saved what we could, re-frosted some and put the rest in the kitchen to throw away later. Funny note* some ladies liked them so much they decided they would eat the ones that fell on the asphalt anyway, I suppose that 's a good sign :) 

Some ladies asked me about using milk/dark chocolate mousse instead of white in the strawberries. We tried it and it was delicious. It tasted a bit like a chocolate covered strawberry without the crunch!

Chocolate Mousse:

1 c melted chocolate chips cooled but still liquid, any flavor

1 8 oz package cream cheese (may use only 4 oz to make it lighter)

1 cup powdered sugar

1 tsp vanilla 

8 oz container cool whip

-Melt chips in double boiler, set aside to cool. Beat cheese, sugar & vanilla in separate bowl until creamy. When chocolate is cooled gently stir in to cheese mixture. Fold in 1/2 of the cool whip until combined. Then fold in the rest until completely combined. Then mix with beaters. You can use right away or set in fridge until ready to use. 

*This is also great in cakes, fruit, alone etc... enjoy!

We also made a raspberry frappe!
1/2 gallon raspberry sherbet
1/4-1/2 gallon vanilla ice cream
1-2 cups 7up
fresh raspberries for topping
 *Mix together in large bowl with beaters until milkshake consistency, top with berries.

Red Velvet Cheesecake

The cake was McCormick's Red Velvet cake recipe, Philadelphia's cheese cake recipe for middle and traditional cream cheese frosting to cover, decorate, and glue layers together. 

(you can use Duncan Hines red velvet cake mix  and no bake cheese cake mix if you are very careful to make sure it sets up properly before layering.

I bake the cake in 2 9" pans and only used one layer and froze the other. Cut it in half, and slice off top of cake until flat (keep crumbs to sprinkle on top). Place cheesecake in between layers, glue together with frosting.  Cover and decorate with Cream cheese frosting and extra crumbs. 

My M-I-L had these cute drinks at the dinner table for us, she is so creative :)

Sweet Scripture Feast

This is not a normal cake post, but many people have asked me for a copy of this so here it is:

    My husband and I decided to create this game for family home evening with his entire family a few weeks ago. We had so much fun finding the scriptures and candy to create clues and answers. It was a Hit! 

Everyone was laughing and having a great time trying to figure out some of the clues. There are some that were purposely easy for the younger family members. The clues are mostly just tidbits of the original scripture for the sake of space on paper (about 4 pages). 

It would be fun with the youth to make it a scripture chase where they have to find the scripture, read it and figure out the clue first!

80's Flashback

I was asked to make an 80's birthday cake for a 30th birthday party.

The top layer of cake was key-lime with vanilla buttercream frosting, covered & decorated in fondant. and also decorated with buttercream splatter paint and clouds. (The rainbow and 30 are fondant)

The bottom layer of cake was black magic cake (chocolate) and hazelnut/chocolate mousse filling, covered in buttercream and fondant.
