Sheriff Mickey Mouse

My baby turned 1 today!
 Sweet memories of his chubby (yes chubby) cheeks from the day he was born are fresh in my memory.

Ben made such a mess of his cupcake, and love it!

Treasure Chest Cake

The original cake. Here's my disclaimer: It was 97degrees and our A/C was not working.  the chocolate fondant was sweaty so I added more sugar, which made it crumbly... this cake was the death of me!!!! I had a hard time getting the fondant smooth, it was late at night and the party was at 9am...there was no going back.
The kids loved it though.  My daughter wanted a pirate Izzy party with a chocolate treasure chest cake.
For the friend party the kids ate the top of the chest.

The revised cake. For the family party I rearranged the treasure and we had it again.
I used a chocolate cake mix and substituted the oil with applesauce, then added another tablespoon of cocoa and a teaspoon of vanilla to mask the apple taste.  The cake was very moist!
I covered it in chocolate buttercream, then in fondant.
Izzy Pirate Party activities:

  • -get quilt squares cut on a diagonal to make bandanas
  • -made a treasure chest out of cupcake boxes found at micheals with rhinestone & glittery stickers, pipe-cleaner handles attached
  • -went on a treasure hunt: pixie sticks for pixie dust, rolo's for gold, plastic coins & necklaces, ring pops for jewels, chocolate coins are great too!
  • -played a starfish ring toss game found a Zurchers

Cake Mix Cookies

 

I had to make a treat at the last minute for my daughters last soccer game, so I went for cake mix cookies.
Recipe:
Any flavor cake mix
2/3 c shortening
2 eggs
Mix ingredients well, roll into balls, place on cookie sheet 2 inches apart, bake @375 for 7-8min. 
(just until the tops look dry, don't overbake!)
The best ones are made with devil's food cake & sandwiched together with cream cheese frosting, mmm.
I did end up buying frosting from the store, especially the black tube of decorator frosting.

Rainbow Trout

My sweet husband turned 30! He would fish everyday if he could.
To honor him I made him a rainbow trout birthday cake.
(Yellow cake, vanilla frosting, fondant, with fondant fins, then hand painted)

Krispy Kreme Doughnuts

These were sooo good! FYI I did have to double the glaze. Here's the recipe:)

Krispy Kreme Doughnuts
Makes: 2−3 dozen doughnuts

Raised doughnuts:
2 pkgs. regular or rapid rise yeast
1/4 cup warm water (105−115 degrees)
1 1/2 cups lukewarm milk (scalded then cooled)
1/2 cup sugar
1 tsp. salt
2 eggs
1/3 cup shortening
5 cups all−purpose flour
Vegetable oil
Creamy glaze or chocolate glaze

Dissolve yeast in warm water in 2 1/2−quart bowl. Add milk, salt, eggs, shortening and 2 cups flour. Beat on low speed scraping bowl constantly, 30 seconds. Beat on medium speed scraping bowl occasionally, 2 minutes. Stir in remaining flour until smooth. Cover and let rise in warm place, until double, 50−60 minutes. (Dough is ready when indentation remains when touched.) Turn dough onto floured surface; roll around lightly to coat with flour. Gently roll dough 1/2−inch thick with floured rolling pin. Cut with floured doughnut cutter.
Cover and let rise until double, 30−40 minutes. Heat vegetable oil in deep fryer to 350 degrees. Slide doughnuts into hot oil with wide spatula. Turn doughnuts as they rise to the surface. Fry until golden brown, about 1 minute on each side. Remove carefully from oil (do not prick surface); drain. Dip the doughnuts into creamy glaze, set on rack, then when slightly cooled spread chocolate glaze on top. Can dip in sprinkles or other toppings after chocolate if desired.

I've been slacking at blogging lately, but here's what I've been up to lately... more to come:)
Flip Flop cake: Chocolate cake, vanilla frosting, covered in vanilla fondant. I made the flip flops out of fondant and let them dry over night
Rapunzel cake: Funfetti cake, vanilla frosting.  My friends daughter was sooo cute she saw the cake  I made for my little girl and asked me, "Maweeea will you make me a Wapunzel cake?" Who could resist :)
