| Key Lime Cake with Coconut frosting. Mmmmmm! I took a simple vanilla cake recipe (if you use a cake mix, I suggest white cake) and added grated lime zest and some lime juice. Then made cream cheese frosting and added creamed coconut... found at the grocery store in a small box by the shredded coconut. ps. Did you know you can make your own cake flour by taking 2T per cup of flour and replacing it with cornstarch? You do have to sift it 4 or 5 times, but it is fabulous when you don't have cake flour on hand. |
